1 small frozen banana slices (I like to cut ripe banana up and keep in a freezer bag for smoothies, keeps them nice and chilly)
If you don't have frozen, no problem, use what you have!
1/2 cup vanilla yogurt
1/2 cup or so of milk
Pumpkin purée (1/2 cup) or
cooked down pumpkin (not raw) start with a few spoons full and up to 1/2 cup to taste
(When cooking something for kids that's new I always start with less of the new ingredient to make sure it's not too intense)
A couple dashes of cinnamon or even better pumpkin pie spice
A couple spoons of maple syrup (if you don't have it use pancake syrup :)
A handful of ice cubes
Add a little sugar to taste if you like!
Put everything in a good blender and blend until smooth. Enjoy!
How long does your carved pumpkin last? I don't know why but I just never thought of doing this, and maybe everyone else is doing it but me, but to me this is a huge discovery!
My kids start their pumpkin carving just as soon as October arrives, I scrape just enough of the inside layer to cook down and use for a little pumpkin snack and then we carve it, only to have it last for no more than 2 days before it get's yucky.
Here come's my big Idea...... when you are not enjoying it, say overnight.............put it in your fridge!
Take a shopping bag, put the pumpkin in it and in the fridge it goes! We are on day 3 and it looks and smells great! What took me so long to figure this out?
It's the simple things for me:)
oh and by the way, a safety tip! if you have kids or if you are terrified of fire, like I am, get yourself a little led light candle votive! They burn cool and won't pose a burn risk for your kiddos.
My girls are into fairies and so we thought out first carved pumpkin would be a fairy house! Hopefully it will last a few more days!
