My favorite recipe to make is cauliflower with sausage, pasta, and pecorino cheese, and after finding this beautiful purple cauliflower at the farmers market I thought I would try it, with a purple twist (we all know how purple obsessed i am:)
Super simple ingredients, super easy to make, just 2 pots needed!
1 pound apple chicken sausage ( or mild italian)
1 head of purple cauliflower
1 clove of garlic
1/2 cup of pecorino romano cheese
1/2 cup bread crumbs
1 carton chicken broth
1 pound of pasta (shells or orcechette)
Salt and pepper to taste
Pinch of red pepper flakes (optional)
Sprig of thyme (optional)
Cut or kitchen sheer your sausage into slices and saute them with a little olive oil until cooked through.
Meanwhile cook your pasta according to the directions.
To your sausage pan, add onions and saute until tender then add in diced clove of garlic and saute until tender as well.
Add your cut up cauliflower and sprig of thyme if you like, into the same pan and pour your chicken stock up until it's almost at the top of your cauliflower pieces.
Cook on medium until a fork inserted into cauliflower goes through easily, nice and tender. Take out the sprig of thyme.
Strain your pasta and add it to the pan, and mix in the delicious pecorino and bread crumbs..
This will absorb the stock and turn it into a creamy coating of yumminess!
Taste, add a pinch of salt and pepper, and a pinch of hot peppers if you like. Garnish with a few sprig leaves.
